Food was
Pear and plum for breakfast
Toast (100% whole wheat and grains of course. White bread tastes like paste. blech)
topped with one whole sliced plum tomato topped with about 1 Tb blue cheese crumbles and slightly melted in micro.
topped with fresh basil. mmmmm!!
Dinner was Ginger Chicken in a lettuce wrap and a pork meatball with bok choy and whole wheat noodles. All home made so I know everything was good, fresh, and healthy. The meatball was ground pork, not sausage.
I also had rice pudding that I made with non fat milk and lite coconut milk, instead of whole milk and heavy cream, so it was not too fattening. I used just over 1/3 cup of sugar instead of the 1/2 cup called for. With added vanilla and cinnamon, it was delicious! The kids loved it.
So not a bad day at all!!
Now, as soon as my hubby wakes up, I'll go in the bedroom and get on the treadmill, and start my morning right!
